I guess my metaphor is trying to say, the body of work that Cena is in with his career is a tad more simple in terms of game planning, and developing technique then a fight.
I will say this though, regardless of how easy he learns or how coachable he may or may not be, Cena is an explosive athlete and that is a viable asset for any sport, specially with MMA. However other factors such as developing an offensive set, defensive set and implementing both of them into a game plan . Another problem he would face would be is stamina/cardio issues and whatever prior damage/injuries he has endured during his WWE carrer, In general i think hes not to old, but hes up there in age, to be anything more viable then a journey man/gate keeper at best. freak show at worse

Yes I agree with everything you say but I think he already has proved he has good grappling/submissions as a base.
In his original fight with brock (the real one where they had a fight live on TV when brock returned) he had his lip split open and clearly lost the fight. It was kinda hard to see because of all the people breaking it up but it kind of looked like cena could hold his own a little bit. It would be interesting to see what he could be with some real striking training to add to his grappling, but obviously he would want to take the fight to the floor and apply submissions where possible.
