I just got a job at a bar today. It's a soccer pub, and the owner told me he has soccer covered and he could use a guy who knows a lot about American football. I said I could learn. I know a little about the NFL and even less about college. Just the big name players and what teams are in what conference. Where do I start? What's the best way to get the skillset required to do a good job?

Those are the main, from there you can branch into the others.
In NFL, well the only way to know what you're talking about is to actually follow it. Other than that you can pretend follow it and regurgitate popular opinions to get by. Though a real fan might notice you're just pretending, who really cares.

What state is the bar in? Just follow the biggest college and NFL team there and you should be good. Unless you are in Minnesota than you need to learn about the Packers too considering all the bandwagoners.
Start a fantasy football team too if you want to force yourself to learn more about football in general.

Make sure you learn the basics of the sport first. Most people won't care if you don't know every player on every team when talking about the sport but will care a lot whether you understand the basics of down and distance, play calling, and things like that. It's super cringy to listen to somebody talk about a sport you can tell they don't understand. That being said don't be afraid to ask questions. Most people enjoy teaching other people about stuff they're in to.
As long as you understand what is happening in a game at a glance and why teams are doing what they are doing you should do fine.

I'm in Memphis, Tennessee. The Tigers are garbage at football, and Memphis feels no loyalty to the Titans since they lied to the city about playing 4 games a season in town.
Mostly SEC fans, but since the bar is downtown, there will be a ton of tourists.

ESPN site is kind of garbage now. Try cbs sports and you can navigate to the NFL Team pages and they will have recent news. General NFL info can be found on yahoo sports too. It's going to be hard to follow the entire league so I'd focus on southern teams and than just keep up to date on big news during the season.
