You follow your home team, closest geographically. Otherwise, you pick a team that's closest for personal reasons. Your girlfriend's team is fine, and luckily she picked a decent team with interesting history.
Here's what you should do: watch games and the fuck out of Ken Burns' Baseball documentary. ALL TEN EPISODES. And watch some commentary, MLB TV and post-game show things.

I got into baseball by reading up on the history and romance of it all, It became a nationwide professional sport in the 1850s which is on par with football/soccer.
