there's a lot more competition disparity due to there being over a hundred FBS schools, and even for the majority part of the season where the top conferences play among themselves there's still a few schools in each of them that aren't even in the top 50. that said, it also leads to more exciting upsets, which mean way more because 1 loss in the whole season could end your championship hopes.
partially because of that, there's a lot more room for trick plays, meme formations, and bullshit crazy events happening because there's generally more in flux. a lot of boring games sure, but with dozens of games being played every saturday there's always bound to be several interesting ones.
the fan culture is also commonly touted as superior to the NFL, and closer to the intense local pride that europeans talk about when criticizing our football fans. most major schools are over a century old and have many decades of unique traditions and intense rivalries, things you'll notice much more in college football that aren't so much in the pros.
the rules are a bit different in places, yeah, and the average player is not as good, yeah, but it's still a very worthwhile sport to watch. in some ways, it's almost like a different sport and can't really be compared to NFL football.
