When they went to the finals in '08, Malkin was the guy because of Crosby's high ankle sprain, same thing when Crosby only played the second half of the season after his concussion. First off, potatoes. Fries need to be well cooked. You can deep fry them first ( les blanchires) before you are ready for the end frying. Need to very-well cooked.
Cheese need to be curds. I use local cheese, Fromagerie St-Fidele. Shit is delicious, i buy 1lb bags whenever i pass close. If it's really fresh, it will still be hot and have liquids in here. That's what you want. Gives contrast with the fries, who are tender.
Sauce, i use commercial brown beef based one, but i like to mix it with chicken or BBQ. Ratio depending on modd, up to 1:1 Brown to BBQ.
After that, you can get fancy. I like putting marinated pork in there, marinade is mom's recipe, maple syrup,oil, salt, cassonade.
