4 was definitely the best. It had great levels that weren't too large, but had enough space that you could string combos around the whole map plus it has my favorite soundtrack of all of them. The on foot portions and the increasing use of non skating part brought the series down starting with THUG and leading to the Jackass shit that was THUG 2.

The core gameplay of SSX2012 was amazing and it was, at times, a sight to behold, but it was lacking in some serious essential features and didn't have much variety in its venues, nor any of that truly colorful atmosphere that was so important to the other ones.
Part of the joy of SSX3 was just taking a leisurely ride from the top of the mountain to the bottom without any actual pressure to perform, jamming out to pop-punk and techno, and EA, in its infinite wisdom, said "Nah, fuck free ride mode"
