Wine is formed from grapes, crushed to matter and left to purify. What Dr. Laal is telling us here is that the wine he holds symbolises purity. The mince pie represents the world in it's current state, a mess. Contrastic textures, colours, sensations, all forcefully bundled into a frail package of pastry. Sweet but volatile.
Personally I theorise the phrase "enjoy the wine AND the mince pie" implies lack of choice, in us as humans. We can have both, enjoy both, but not mix them. Prof. Goyes is simply telling us there can be no purity in the voliatile nature of the earth and one day we will crumble.
