I'd go semi auto. Revolvers have their place, but a semi auto has more pros than it does cons.
As for the ar vs ak argument, me personally, I like the feel of the ak better. With that said, the ar is obviously going to be inherently more accurate, have a bigger aftermarket, and needs to be maintained a bit more, and needs a bit of practice to get used to all the controls and features.
The ak has a decent aftermarket these days, can't really be made to shoot different calibers easily, and doesn't need as much maintenance.
Tl;dr I'm an ak guy, but it has it's weak points. The ar is better for most people.

Already have the muscle memory for an ar. Accuracy is actually pretty much the same when dealing with semi auto instead of rapid fire. I am not planning on selling anything once I aquire it. I want something that will be the best when the shit hits the fan. Are there any decent optics for the ar? Honestly all that mod stuff is bullshit, if you train with your weapon, optics are the only thing that make a real difference. And even then you can learn to shoot two eyed.

A decent plate carrier with ar500 plates would be the best bang for your buck.
Optics are for sure, one spot you don't want to skimp if you are going to get one. Trijicon acogs are awesome if you're going magnified, but the eye relief on them kinda sucks. Aimpoint makes the best red dots bar none. It really depends what you want, and what you think you'll need. If it's your shtf gun, it should always have back up irons attached if all else fails.
I agree 100%. Most of the mods are gimmicks. I believe in keeping the weapon the way it was designed to be used. Small add ons here and there are fine. But the more shit you stick to it, the more specialized it becomes, and the less it can really do.

For the ak, it depends what caliber you get. I recommend 7.62x39 unless you live in a place with a lot of flatland, as 7.62x39 drops like a rock past 200m. A nice red dot would be great in most cases. A lot of Ak's have the optic plate on the side, so an adapter to put any optic you went on it is an option.
The c39 ak is supposedly pretty good, and it's milled. It doesn't have an optic plate, however. So you would need a gunsmith to add it if you wanted one. The yugo pap Ak's are among the best. The only downside with them is, they don't have a chromed bore. Not a big deal, just something to be aware of. Remember to oil the bore, and clean after corrosive ammo if you ever find any. The paps are also made on rpk receivers, so they're a little more beefy.

Try hitting the cerebellum, which is exactly what "One shot, one kill" is talking about. It's the size of an apricot. Easier to hit after a double or even triple tap to center mass. Then you go for the "headshot", which is the intersection of the "T-zone" of someone's face. (Draw an invisible, horizontal line from your left eye to the right, now draw another invisible but vertical line from the top of the bridge of your nose to your nostrils - where those two lines intersect is where you should aim after the standard response of double tapping a threat.
Full auto has it's uses in keeping someone's head down but the idea is to have a team assault the position your are trying to pepper with copper, lead, steel, what have you.
