as has been established i do like reading old cookbooks, and i've been exploring julia child's mastering the art of french cooking. actually i've posted some things i got from there before i think without explicitly mentioning them. but this time i was making an effort to follow her recipes as exactly as possible (and they're at face value absurd. they're not traditional french haute cuisine; they're an interpretation of french haute cuisine designed for a 1960s homemaker with the assumption that the reader would have time to spend most of the day in the kitchen. for a home cook this book is actually absurdly demanding, but for a restaurant environment with several line cooks it cuts lots of corners. some of her advice is simply out of date also, or assumes ideal ingredients are not available (suggestion of "green onions" for shallots, suggestion of "swiss" cheese when gruyere or comte are correct).
anywho while i normally avoid all the fancy french names i'll report them how julia does in this ITT. this is pork tenderloin cooked in a casserole with onions and carrots (Rôti de Porc Poêlé), the remaining pan sauce made into a Sauce Diable (it's got cayenne pepper, and i made it just a little spicy... most of that orange is literally from the carrots, not the pepper, but i suppose it's devil sauce cuz it's a lil hot, i kept it very subtle though), with haricots verts (the skinny french green beans on the side)... but since that isn't a whole meal i made some more stuff...

i also made eggplants stuffed with "Riz Duxelles" (rice duxelles, the later word meaning minced and partly dehydrated mushrooms cooked in butter (i used half cremini and half shiitake), and the proper name for the thing being "Aubergines Farcies Duxelles". i wanted the smaller eggplants but they were out so i bought the larger regular ones and cut them in half. this is ideal with the sicilian type eggplant i think. i've made stuffed eggplant dishes before. anyway it's eggplants halved, scored, roasted, flesh scooped out and chopped, mixed with duxelles and cream cheese and herbs, stuffed back in and topped with grated cheese (gruyere) and breadcrumbs and melted butter and baked.

and of course i had a salad too! (dressing is a basic shallot vinaigrette with some dijon mustard as an emulsifier).. half the time my salad dressings are a splash of vinegar and a splash of oil and the lettuce tossed in it so this does represent a little more effort than usual. and i had tomatoes of course. i love tomatoes.
i took enough pictures i could halfway do a proper step by step thread but near the end when i was trying to multitask everything i stopped taking pictures until i got it finished.
anyway i did put some effort into this one.

here is a picture of the cheese. this one was a bit younger than the gruyere i usually buy but i was wanting something somewhat waxy so it would melt well.
yes this cheese is actually worth paying $20/lb for. there are some that cost more but all of those are more delicate in terms of limited preservation potential (like epoisses or whatnot)

I know I'm nothing in the grand scheme of things. I accept it.
I don't claim that it's education that really means anything, even though I have gotten a job within the field and made more money than I know what to do with.
I'm simply stating that because of it, it's easy to pass off what you're doing as juvenile and laughable at best. Education doesn't need to have a practical purpose to be put to use in everyday life.
But nah, I despise people who take internet IQ tests and interpret them as being true. There's no multiple answer questionnaire in the world that will give you accurate results. There are hands on puzzles and problems that require a great deal more intelligence to subsequently ace than just, "how many triangles are in this image".
I admire your attempt at le armchair psychology though. It was a breath of fresh air
