quick thread today with some fast an easy food that has some special ingredients! i know the colors and everything, lol.. it's pasta, obviously, but the spaghetti is black cuz it's made with squid ink in it. like u know how green pasta is made with spinach and the red ones have beets? they make black pasta with ink. it's got a very subtly fishy flavor to it but mostly is just for the cool color. it's also got shrimp, and tomato sauce with nduja (that's a spicy sausage from calabria), and topped with parsley. i hope this looks yum yum. cuz of the colors ppl will prob say it's gross... oh and no cheese on the pasta. for whatever reason topping with parmigiano is a no no if it's seafood based traditionally, and i stuck with that rule for today's meal even tho i sometimes think it's silly.
also, salad! it's got goat cheese and the pickles on there are homemade also (:

yes jarred sauce... see.. i bought this cuz it's got nduja in it already, it also has some basil in it and looks pretty oily... supposedly it has onion but it must be cooked in pretty well. i prefer to make my own pasta sauces but i bought this so i might as well use it. also the rest i think i'll use as a topping for bruschetta. it's pretty spicy, which is cool.
also squid ink and egg sketti, a shallot, garlic, a lime (i'd normally use a lemon but whatever, similar enough!), parsley, marjoram, bay leaves, olive oil, salt and pepper. (yeh i'm using that goofy pink himalayan salt)

the first step is to make shrimp stock. peel ur shrimp! i had some extra shrimp shells in the fridge. devein them if they have that. if they have heads on them include that!
i put a clove of crushed garlic and some marjoram and bay leaves also. just bring that to a simmer and let it cook 10 minutes, then strain and discard the solids.

cook the pasta al dente, a little under done, cuz u wanna finish it in the sauce itself, then drain it but reserve some of the cooking water (it will have starch and salt in it), and mix about half a cup of the cooking water into the sauce, add the pasta to finish it cooking, and the shrimp (shrimp cooks very fast so u don't want it to get tough if it cooks too long add it very last)
season with black pepper also.

it's done when the shrimp is pink and the pasta is still chewy but not crunchy in the middle! top with freshly chopped parsley to serve! that's all. pretty fast and easy and very tasty! tastes like fish and hot and spicy too.

Oh yes LoLo, that looks yummy! It's too bad that there's no cheese on the pasta.. oh well. I hate to say this, but I don't have too high an opinion of the squid ink. The ink just makes the spaghetti look weird and kinda unappetizing, to be honest. But the shrimp and that delicious sauce more than makes up for that! The salad's great as always too!

also i forgot to mention, add lemon juice (or i used a lime to lime juice!) at the end of cooking also. to squeeze lemons or limes i find it easiest to quarter them first. also watch out for seeds, sometimes they have seeds and sometimes they don't!
