Because many anons expect to be spoonfed. They set up the request and come back for their goods way after the thread has expired, with no intention of giving gratitude whatsoever.
Although a thank you is simple and quite valueless, its still incentive to those that help. Lets them know their help is valued and not going unnoticed.
And it's just common fucking sense to show your appreciation for the gold that is literally pulled out of thin air.
