Dogs are extensively specialized from breed to breed. Some for speed, some for scent, some for size, and various other types of things. Retrievers have webbed paws and can hold things in their mouths without breaking them because hunters wanted them to be able to paddle and retrieve game they shot and bring it back without crushing it.
Temperament is also a big part of a breed. Let's take a breed where the most aggressive and unpredictable dogs are bred in high demand as fighters and bull baiters and see if that doesn't change their disposition after a couple hundred years.

Someone tried to drown him as a pupper. He belonged to the Ohio state prison system as part of some program to rehabilitate prisoners. My aunt has a dog that is half chow half pit. Literally the most well behaved and sweet dog in the world, because my aunt had her trained properly.
She still puts her on a leash for walks, and a muzzle on her because while the dog is seet, she's also very protective of my aunt (snapped at a man knce for making sudden movement towards my aunts, but it turns out he was tripping and fell towards her).
My aunt is an example of a good and smart dog owner. You have an animal in your house, and just because they're loving doesn't mean they have no chance of snapping. I have a son under 2, and the dog likes him, but she puts the muzzle on anyways.
Juxtapose this next to my mother who also owns a dog and has no idea how to raise it. That thing is a mutt and the most ill behaved dog ever. This one has instilled a young fear of dogs into my child now.
