It's not just "do what the Pope says." If the Pope says something relating to doctrine (as in not his personal opinions on immigration or whatnot, but speaking of Christology or something like that) that is out of line, the Swiss guard has the right to remove him. Doctrine is not decided by the Pope alone, but by many theologians and church authorities. This doctrine is arrived at through either scripture itself, or building on the ideas developed in scripture (through natural law, etc.). All of the arguments are there and available for you to check out on your own if you like. If something doesn't seem right, the church is always receptive to argument, but a 2000-year philosophical tradition has some pretty solid arguments.
It's possible to be a good Catholic without paying attention to the Pope, you just need the connection to Rome.
