You just walk around your town with the app open or in battery saver mode. Landmarks around your town a "Pokestops" where you can get Pokeballs, Eggs (Take between 2-10km to hatch from the ones I've got, still haven't hatched one yet lol), Potions, Revives etc.
Pokemon will randomly appear, though you can track Pokemon near you and find out if you're getting closer to them. Once they appear, you just tap on their sprite on your screen and flick your finger across the screen to try catch it, like those old paper football or rugby conversion games except with Pokemon.
There are other landmarks designated as gyms where people can take over and hold, you have to choose one of three teams when you get to level 5, so you can either help a gym of your colour or take a gym of another.
You can waste a lot of time on it and get fucking nothing done, there's just not enough content yet. And there's also the need to actually leave your house (at least in my case) to do anything.
I don't think the game will ever be big, but it'll explode for a time, then just kind of slowly die off.

For the moment, basically yes. You can capture and defend gyms. To evolve a mon you need to capture the same pokemon over and over and consume the extras into the one you wanna save and level up.
