Religious freedom as we understand it, is something modern, namely from the 1948 Universal Declaration of Human Rights. The religious freedom your speaking of, was only between catholics and protestants, and it was not always respected. The Quran being badly written has mentions of religious freedom, but at the same time condemns the not-Muslism.

If you put a human to live with dogs, he will act and think like a dog.
Human intellect is based on adaptation, I as an open minded non muslim or religous person can adapt to muslim culture.
