Not sure. I guess our ancestors just preferred a plain architectural style. Europe went through many architectural moods over their long histories and so ended up producing an aesthetically pleasing mish-mash of exotic architectural styles in their towns. That's the best I got.

But our cities are built for cars, Europe's citis are built for people. Our buildings were built for financial pragmatism and function. Aesthetics was a secondary effort. This is especially the case for the later 20th century, when Keynesian economics kind of took over for good. Everything looks and feels replaceable, because it is.
But in Europe it wasn't the same philosophy until the 20th century. A lot of old buildings and architecture gives them a sense of culture, especially in southern Europe where its very ancient cultures that were deeply into architecture.
Modern art has ruined architecture, and is mostly pretty gross.

This cathedral is in the centre of our capital.

Europe has had thousands of years to produce nice cozy towns with medieval architecture . Our towns sprang up over a couple decades around travel routes.
Because our towns weren't built 600 years ago with the worlds most insane street arrangements, meaning we can build them in orderly, grid fashion.
Most builds are made for maximized space usage so the additional expense of making them look neat on the outside is cut out, why bother?

Europe however was build during the ancient regime, which is the only system which could produce something like Versailles, where the monarch as prioritised cultural, aesthetic, or moral value over simply the cost.
You have to remember a lot of those euro architects (a long with scientists, artists.. Etc) felt they either had God working through them, or were working to please God, so demanded perfection and going that extra mile. There's far more of a sentimental thought process put into the design of past euro anything.

Many of the older downtowns used to be more lively, but they seem dead now because people shop at Walmart or big box type retailers ... these are built on the outskirts because it's cheaper and land is available... and by a highway off ramp.

As for the cities:
Tuscany is a fucking jewel: Firenze, Pisa, Siena, Lucca are superb.
Venezia is mandatory, altough there's the rip off thing and the city is not very well mantained.
Rome is awesome but there are beggars everywere, just pretend to be a local to avoid them.
