Because it is often abused. The leaders who rally up the populace to fight the governing elite become the governing elite themselves. Which says more about the system than anything else.
Also, the word was dragged through the mud by globalist and establishment media as if it means that the people who are attracted to populist thought are inferior and uneducated. But as any generalisation it is wrong.

Because populism means the establishment/corporate/media/etc. types who normally control what everyone does and thinks through the power of propaganda/marketing don't get to be in charge anymore.
This causes them to go whine on TV about how horrible populism is, which causes idiots who can't think for themselves to believe populism actually is bad.

It is pandering to the lowest common denominator through an oversimplified view of a single issue. In itself it is not "bad" since it shows the government a shortcoming of theirs, an area where they can improve that the electorate considers important.
When a populist movement gets too much support and gets to power, however, it often finds itself incapable of handling the responsibilities and its approval ratings crash really fast. As such, populist movements often destabilize countries, turning politics into a race of "who will promise the most desirable thing" rather than a competition between established ideologies.
