Jews in general do not eat pork because they are not kosher. In order for meat to be kosher, the animal must have split hooves, chew their cud, and must be slaughtered and blessed by a rabbi in a certain way. They also have to have a vegetarian diet and the blood has to be soaked up by salt, rather than just draining it. A pig does not chew their cud because a pig does not have 2 stomachs.
Simple as that.
There's rules for poultry and seafood as well. But I won't go into that unless you really want to know.
