I just got hearts of iron 4. Paradox does make some based games.
All three are good games. I have over 300 hours on ck2 alone.
CK2 is one of most fun I've ever had with a game, but it's so fuckin involved that you can't take a break from it without having to relearn it all over again which is where I'm at.

I like them all, EU4 seemed like a step backward though. I don't think the monarch point mana system adds anything to the series except an unnecessary thing to deal with.
Victoria 2 is great despite all its flaws. Just the fact that it tries to make a deep economy system is a nice to see, but it fails quite a bit. You can't negotiate trade between countries or aim tariffs at specific countries. Capitalists are terrible at prioritizing the right factories. I don't think the way factories are set up is very realistic either. Factories don't start as huge buildings employing thousands of workers (not all of them, at least), but as a small set up of a few workers. Another problem with factories I find is the huge bonus you get for having the resource in the same state. While I'm fine with some bonus resulting from less transportation cost, there's no reason for a huge bonus to throughput. This was a great chance for the creators to put in some kind of cost for transportation, which is absent from the entire game. Trade and transport of resources costs nothing, which is super disappointing because throughout the victorian era, the cost of transport decreased, making international trade much more prevalent. Railroad building feels off for this same reason. It doesn't feel like the purpose of railroads is to transport resources, as you want a railroad in every single state, rather than starting with a line of them to transport across the entire nation, like the Union Pacific was to the US

I have 400hrs in ck2 and eu4. I like ck2 a bit more as far as gameplay but I like eu4's time period more for rp/alternate history.
I enjoyed EU4 for a time.

I've only recently really got into HoI3 even though Ive had it since it came out, preferred Darkest Hour. Only really hit me that it was a decent/challenging game when invading the USA as Germany. It's been so intense.

Honestly this American campaign is the most fun I've had in any HoI game, it's 1948 now. HOI 3 is a lot better than it seemed before desu
Been playing Hoi2 since 2006-ish. In that time I've done five complete playthroughs. In rough order:
US-- babby's first playthrough. Ended up fighting Germans in eastern siberia.
Australia-- Went heavy naval, ended up with Aussie shitposting in SE Asia for most of the war.
Brazil-- Boring playthrough. Somehow ended up controlling Indonesia.
Netherlands-- didn't bother defending Europe. Moved south and established a glorious white colony stretching from Madagascar to the Phillippines.
Argentina-- current playthrough. Making South America Great Again.

I don't know about eu4 specifically but Paradox games in general are easy enough to get into even if you don't know every mechanic.
If you're not retarded you'll figure things out as you go and have it down in no time.
CKII is probably my most played game ever at this point, even though it isn't even that old, I've just sunk hours into it so consistently.
The game has become progressively worse with every expansion pack since Legacy of Rome however (the sole exception being Sons of Abraham).

I quite enjoy the possibility of play throughs where I can do interesting things with women characters. The vanilla limitations in CK2 were quite accurate and fitting of the time and gave a nice sense of challenge with the playthroughs, though I can also enjoy the new things you can do with Conclave.
No need to get a DLC you don't like. I don't mind that these companies give us the possibility, so long as they don't pretend it is at all historically accurate.
Considering we got a fucking Aztec invasion we can safely say Paradox was never aiming for FULL historical accuracy, at least in their DLC.
I did get good keks out of the outrage over Conclave when it got announced though with some Paradox folk going full SJW defending their shit.
