If you want to be remembered the easiest way is probably to shoot some people up but you probably don't want that.
You can join the army for a while and then join the police, the army experience you will have is a very good thing when trying to join the police force.
When it comes to driving armored trucks I don't know, I guess you could just switch to another profession when you feel like you are done with police work, if the bank part isn't all that important then maybe you could try and be that guy who drives the armored van that escorts police sometimes.
