You're talking about exit polling. I don't know because I didn't do that kind of polling. But in general, when exit polls are off by more than 2% for a single candidate or 3.5% overall, the U.S. and UN flag them and examine them in other countries.
Hillary has had a 5% bonus in almost every state (sometimes a 14% bonus). That's from exits. But I don't know how exit pollsters do their stuff though.
For my group we did "detailed" analysis. So if someone had a bumper sticker on their car but wouldn't answer the door we'd make note of it (we didn't count it if nobody seemed to be home, but we did try to do analysis of people who just wouldn't answer the door or who would shut the door on us).
For instance, if someone closed the door on us and said "FUCK OBAMA" or "FUCK TRUMP" then we'd take notation of it. I think they were counted in our analysis as "possible democratic voter" or "possible republican voter", but without a supported candidate (since it was the primaries).

Ok so yes Maine has voted democrat the last 6 times, but Trump has a real chance to win! Here's why, 2008 Obama won the 2008 Maine caucuses 2079 to Hillary’s 1397 for a total turnout of 3476. This year Bernie won 2231 to Hillary's 1232 for a total turnout of 3463. So democrat turnout is pretty much the same. Compare that with the Republicans who in 2008 had Mitt Romney win by 2837 to John McCain’s 1176, Ron Pauls 1002, and Mike huckabee for a total of 5333. This year Ted Cruz had 8550! Trump had 6070! Kasich got 2270. And little Marco only got 1492. All for a total of 18382! So if Trump can get most of those votes he has a huge advantage without independents. Northern Maine will vote trump I can almost guarantee. I talk to a lot of them for business and they hate Hillary and want their guns for hunter. One gun literally lives in the woods just hunting for all his meat. Obama only won the cities by a large margin, Maine splits its electoral votes occasionally with the popular vote winner getting 2 then the winner of each district of which there are 2 for a total of 4 votes. Virginia matters very little for Trump at this point. It all comes down to Florida, Ohio, and Pennsylvania. If Trump doesn't win all three of those states he has no realistic path to victory, even if he wins Virginia.
