As churches became more and more powerful with the increase of disposable income, Churches for each particular deity became more and more competitive.

It is only natural that mega churches started to swallow up the smaller ones. This sort of thing happens in the market as well.

Because anyone who was stupid enough to make up a religion where there was a god of fire, a god of lightning, a god of rain etc got BTFO once scientific advancements gave us explanations for those specific things instead of "it's god magic". Monotheism presents god as perfection. Humans are encouraged to be godly and to follow his example. Enter monotheism, the good god, the merciful god, the role model god who is inside every human to a degree. It just so happened to coincide with technological progress and the time humans weren't at mercy of the elements for the first time. Greeks and Romans were the most evolved and had some fairly advanced tech towards the end of their Empire, but most European pagans, especially Nordics and Slavs were cave dwelling savages at that time.
