Properly, it should be called "koshering salt". Ordinary table salt is kosher, but it's not suitable for preparing kosher meat, which requires coarse salt (regarded as "drawing the blood out", since blood isn't kosher).

koshering salt is used by jews to soak up the blood in their meat (they can't eat blood as they think it's impure) and therefore make it "kosher". in order to do this it needs to be big flacky salt and not lil grains
