Yeah, the open ended world and lack of instancing was a big part of its charm. But the ability to kill players is what really gave the game a sense of adventure and danger. You could be killed by anyone, anywhere, unless you were in a town. You'd also lose all your gear, further adding to the sense of danger.
Killing players also had consequences, as your character would lose reputation and become an outlaw, which prevented you from entering towns. Criminals could be freely attacked by normal players without losing reputation, making a career as a player killer a risky choice and forced you to band together with others.
It really was a dynamic, dangerous world where your actions had conquences, something modern MMOs simply don't have. UO lost it when they divided the world and made player killing impossible in the world where 80% of the players were.
