Vulgar Latin uses formaticus. Italian uses formaggio.
This varies throughout all of italy. Did they take the classical latin or the vulgar. Depends on the word.

Next, there's a thing called diphthongization which is the production of diphthongs. That is, two paired vowels. Neapolitan uses -ie- which Italian doesn't really. But Italian uses -uo- which Neapolitan doesn't. That's how you get Cuore vs. Core and Viecchio vs. Vecchio.

Italia has many very nice places in the campagna where you'll find no shitskins, very few tourists and real italian traditions and culture. However, it would making learning those languages a breeze.

There were a lot of shifts that occured from Latin. Much of it is predictable. So if you knew Latin and looked at an Italian word you'd be able to figure it out (probably), especially if you looked at the shifts. But the reverse isn't necessarily true.

Also French is the furthest from Latin, you'll have difficulty with them.

If by Romans you mean the inhabitants of Roman Italy, we're still here.
If by Romans you mean the Latins, we don't even know what we are looking for.
Latins were IE speaking, but many other IE speaking tribes invaded much of Italy since the Bronze age, so I don't think historians have reasons to assume they'd be of much different stock, Latin isn't a much separated Italic language, it is part of the Latino-Faliscan branch of the Italic languages, which contains also Venetic(north-east Italy) and the Sicel language(Sicily).
Moreover, Etruscans dominated the area around Rome and the city for quite a bit, it's hard to know if the aristocracies intermixed during the kingdom. Consider that some Emperors into the 1st century AD are attested to know the Etruscan language before it got lost.
