I tried their Kangaroo kebabs, but the meat was really bitter tasting. I'm not sure if that is just a normal thing or if what I had gotten was just cooked poorly.

Bison was a test to see if Americans would buy exotic meats. Some grocery stores still carry it but must don't because it didn't sell well. There's nothing illegal about kangaroo meat. There was a restaurant where I live that served it along with moose, ostrich, gator, and many other exotic meats. But it was expensive because people in the US don't regularly eat those meats.

Roo is a bit like venison. It has a stronger flavour than beef. It has very low fat content and should be treated like venison, use enough of a good oil/marinade and DON'T OVERCOOK IT.
You can have it extremely rare and it's very tasty. Goes well with european classics like potatoes and gravy (or a fancy jus), I've also had a nice Thai salad with very thin strips rubbed in chilli, lime and coriander.
So don't sit there like a stunned mullet and get down to Woolies for a piece of Skippy, ya cunt.
