It's because of natural selection and geography
People in one part of the world survived due to certain traits. When you mix them the result is random. I had had trouble with crowded teeth, caused by different genetics for head shape, tooth size and jaw size being mixed. Each was specialised and perfect due to nature, now they are a clusterfuck of different things which do not work cohesively. I do not like to think about my organs.

They actually do suffer from some congenital diseases, because human DNA is full of errors. Evolution has tried to fix some of these errors, but the fixes get inherited only if both parents have them. A mixed child might therefore only get the genetic error. And even the fix itself can be damaging, if the original error does not get inherited.

Basically, it goes like this: your genes for how big your teeth get are kept on a different pair of chromosomes than the genes for how big your jaw gets. Different races have different versions of these genes.
So let's call "big tooth" gene T with "little tooth" gene t. "Big jaw" is J, "Little jaw" is j.
So a white (tt,jj) and a black (TT,JJ) have offpsring together. This first generation hybrid (Tt,Jj) has no major problems: his jaw and teeth will both be someplace in the middle of his parents. So far so good, right?
So now this first generation hybrid meets another first generation hybrid (also Tt Jj) and they have offspring.
OH SHIT WHAT HAPPENED???
We got a bunch of kids with minor issues: a TT Jj is going to have teeth just a little too big for his jaw, a tt Jj will have teeth just a little too small, but the kids that lose the coin-toss and get TT jj or tt JJ are just a fucking mess. Some get lucky and either get a pure genotype (tt jj or TT JJ) of get the perfect mix (Tt Jj) but most will get the minor defects.
So this is the problem we KNOW about. How many other examples are there like this? Are there brain-size genes on chromosomes apart from skull-size genes? What happens when you try to squeeze a white brain into a black skull? That's a question that will likely never answered: the powers that be will never allow the research to go beyond dental problems.
