The pyramid is structurally the most stable shape. Try stacking a pile of rocks together. They will naturally settle in a pyramidal shape.
Thats essentially what pyramids were: large rocks stacked on top of each other.
Such structures would be very stable and survive thousands of years.
Also, as we know, they took lifetimes to complete. With modern tools we could get the job done in a typical time table for other construction projects (couple years at most).
The fact that they all coincide with stars or w/e is an intentional design feature. The people who built these things had all the free time in the world and often looked at the stars (if for no other reason than curiosity). Over time its only logical they would work out patterns in star movements and positions, and some basic mathematics.
