The temperatures don't have to be in sync since the photons' travelled distance to the happening spot is different, and thus different wavelengths can constructively interfere with each other.
Also Stefan Boltzmann is not only for perfect black bodies. If you had a perfect black body, then e=1, but for human bodies it's e=0.98, which is pretty close
