For people that don't know, riding your bicycle on the sidewalk is actually illegal in pretty much every part of the United States. It's just barely enforced in many smaller municipalities with low foot traffic or when the cyclist is a child.

Not true, devil boy. An officer must have reasonable suspicion of a crime to ask for ID. It is true, however, that the circumstances are hard to define. In most cases, setting up a roadblock and asking for ID is random enough that the request would violate the constitution, and so ID request laws don't get written often.
On the other hand, there is just simple pragmatics: it is too much a waste of time for police to just go around asking for ID.
This usually only comes up when the cop goes ballistic at the refusal, or when they automate ID collection like with license plate readers.
Bottom line: if you have it on you, give it, but you can ask why; if you don't have it on you, tell them you don't have it.

Nothing pisses me off more than people on the road who don't know how to cycle. I use a hybrid cycle, and my average cruising speed is 23-26. Anyone with an actual road bike has no excuse going less than 30. If my 75 year old grandfather can go 35, they can too.

Depends on the state, but, for example, in NYS where I work, the highest appellate court (NYS Court of Appeals) has ruled that not only can you refuse to give name and ID, but also you can run away and that's not enough PC for us to chase.
The Court ruled that a person running away was his way of telling the police "I do not wish to speak with you."
Example in real life:
