I've always said the reason why no big studio was interested in a WW1 game is that it is not an American centric war. Furthermore, the USA are the largest market and would not want to play as Frenchmen.
Finally some non-American studio makes a game about WW1, probably because WW2 and the modern era have been so overused those last few years.
