Show-wise, I would say Ser Arthur again. The way they portrayed him fighting was mad as hell, dual-wielding two-hand swords like a fucking berserk warrior.
Also, the way Robert and his fellow killed him made me mad as fuck and sad. Reading into the lore, you would see that they actually killed him in the most dishonourable way possible.
Arthur Dayne was one of the most elegant, rightful and down-to-earth knight Westeros has ever seen. During the Rebellion, before being dispatched to the Tower of Joy, he faced a strong opponent that at some point during the fight dropped his sword.
What did Arthur do? He paused, gave the sword back to the fella and resumed fighting, like the honourable man he was.
