I can attest to the quality of Cold Steel and Spyderco folders.
Got a few "Recon 1" knives from CS during one of their clearance sales for the old lock system (plenty good, really, don't know the name) when they were moving to the Tri-Ad lock. Great deal.

I prefer traditional western style knives in the kitchen. While a japanese style knife is great for precision slicing I prefer the double-sided sharpness and extra heft of a western style knife for most kitchen applications. Henkels is a good manufacturer at a reasonable price point.
A great set of knives is always a good investment, if you care for them properly they will serve you well for any meal preparation.
