One hectacre can keep over 10 sheep, in a place like New Zealand with a year round growing season. You would have to be able to keep hay for the sheep. And how much money can you make off 10 sheep anyways?

You're close. Climate was the selective factor that determined race survival.
Look at Africa. Plenty of things to eat growing and roaming around, plenty of water, mild temperatures year-round. So populations never had to get smarter to survive, and they still subsistence hunt and live naked in mud huts.
Now look at Europe or other temperature climates with seasons. You had to figure out ways to stay warm, and plan ahead to survive the winter (e.g. gather/grow enough food beforehand, learn how to make it last or cook it to be safe). How would anybody survive or make money?
I have enough to build an adequate house on the free land, but what is the situation regarding infrastructure? I've spent a lot of winter months in a gas-powered trailer in northern Illinois and I'm fine with shitting outside, but I could easily walk to town for food/water and gas. Would it be a similar situation there or would I have to stockpile more? I suppose I could always make money online.
What are the prerequisites? Where can I learn more about the actual process of acquiring some land?

Once you have electricity you have to sort out water. I don't know what the ground water situation is but I'm sure there is enough for a small settlement of a few hundred or a few thousand people.
With electricity & water you can now establish agricultural warehouses. Well insulated buildings should help extend the growing season significantly and decrease likelihood of crop failure.
Although, I don't think settlements of thousands is feasible early on. Start small, a few dozen, and expand as capabilities increase.
