This is my first attempt at putting together photos like this that depend on atmosphere/color schemes done in post. What do you think of them? what can be improved?

I'm not him but I think they look like they're pointing up and to the left too far (from the perspective of the car itself). More importantly, headlight beams are cone-shaped rather than perfect straight laser beams.

yeah, the lights are very weird
Lights are in a cone, not a small line, at regular field of view.
But the car comes off to me as wide angle lens and close up, two things that would stretch the lights even wider.
I love your other car scene without lights though.

Excellent work. I reckon the second one would be a bit better if there was some more detail or maybe some highlights in the background, would give the image more depth

the far light on the 2nd photo isn't too bad but does need adjusting, the first one is way out. you need a graduated filter on both darkening from the beginning of the headlight and gradually coming a little more visible as it cones outwards,
