It's mostly to hide movement and avoid attention from any people. Also, birds of prey are very attuned to colors, and always stay farther away from you if you set up in their hunting grounds with unusual colors.
Conversely, I do wear bright colors when setting up at nests I find. When re-visiting nests year after year, I wear the same colors. That way, the birds remember me, and know I'm not a threat. As a result, I don't disturb them while they are providing for the young, and I also get much better shots.
My wife got a new pack last year, and it bothered the female of a nest we have been checking for 4 years... we were essentially back at square one, with her being standoffish and not leaving the nest. The next day she wore her old pack, and things were back to normal with her fishing right in front of us.

Same, except it was a Sea King. I happened to be at this deserted lake trying for shots of hummingbirds along the shoreline, when they arrived for water exercises.
They saw me, had a clear discussion, waved, and moved to my side of the lake. They altered their exercise and made a bunch of low passes. Was fucking great.
I can post a shot, because I have never posted them anywhere before, as my work is all nature related.
