I always had the autistic fantasy that it would be cool if I went into the woods for a few years and came out with a big nasty claw mark across my face from killing a bear with a big knife or something. I'm guessing you'd have to watch a ton of videos on how they attack.
Then go with that and try and use their weight and strength to your advantage; I guess you could probably get behind one and choke it out if you somehow manage to get it to fly past you after it charges, and as it's recovering jump on its back.
