So, I was planning about doing some recreational activities with my GF's son, I mean, a more healthy and natural stuff.
What do you guys suggest for good outdoor activities with children?
Is fishing a good one?

My nephew turns 7 next week, I bought him a firesteel, and I'm going to help him learn to build a fire. Once he succeeds he gets his second present, a Swiss army knife.

Well I guess if you are going to raise another man's child you might as well do it right. Fishing, camping and hunting are great male bonding ideas OP. These sorts of activities encourage confidence in a boy. Although, it's not as easy as it sounds. You need to take a hard line on the kid's inevitable idiotic behavior, all while being careful not to undermine the confidence and self reliance you should be attempting to establish. And maybe it would be a good idea to teach him some basic gun safety. I hope your not uncomfortable with firearms (I doubt it cause muh south Carolina) if you are you should still teach basic safety and handling so that he knows when his fuckwad friend has his dad's durr rifle and is pointing it at people he should nope out a there and so he isn't the fuckwad doing it. Maybe the only firearm experience he ever gets is that time he was 10 with his favorite uncle/father/whoever you are to him
Sorry for the /k/ rant but I think it teaches responsibility. And because while he might not handle guns ever after that he will definitely be around them.
Consider basic bushcraft too
Show him how to sharpen a stick on a rock
How to build a fort out of sticks an a tarp
Show him how to climb a tree
Let him scrape his knee and show him some first aid basics
Simulate a broken bone by pretending to fall and make a play sling for your arm or something
Fishing is kick ass too
Teach him to swim so he doesn't drown
If you are a firearms guy take him on a hunt and skin an animal (prolly start with a burd hunt if possible like turkey, duck, goose, grouse and such. I think it would be less of an ooooh nnooooz why u shooted bambi for someone who hasnt grown up around those who hunt. ) around him to show him where food comes from
Teach him to drive young ish (that's an up to you age but shoot for like 14 or so if you have empty roads and some trust built from all the above)
Take him night camping because it's scary show him to over come that fear and there is nothing to fear in the woods
Take him to an indoor rock wall to get over a possible fear of heights
Teach him some basic carving/whittling maybe make a twig rooster and paint it

My mom got married when I was three and the guy she married always treated me like a son, taking me camping and teaching me how to work on cars and shit. It made a big difference in my life and I owe him a huge debt. Maybe your girlfriend was a cheating piece of shit, but you can be the dad this kid will probably never have otherwise and if you do a good job the kid will realize this when he's older and love you for it.
As far as outdoors stuff to do probably stick to what you enjoy and have the gear for first, let your activities be directed by the kid more as he gets older and develops his own interests.
Bring him on a "hike". Bring a slingshot and some bottles, let him plink away and tell him not too tell his mom. He'll love you forever after this and you'll have a little harmless secret to share :)

Thanks, but I think bushcraft will be too difficult for him. He doesn't love animals (in fact he hates them) but he is still in that age you can't really build something without breaking it afterwards. He still lacks self control to "make" things decently enough to have a good experience.

My dad took me camping all the time when I was a little shit face and he's the reason I enjoy all of the outdoor activities I do now. And definitely get him a knife but teach him how to be safe with it. Nothing cooler than being a little kid and having responsibility. Definitely teach him how to find firewood and how to make a fire, but again make sure he knows how dangerous fire is and how to not fuck up

I wouldn't go with the Swiss Army Knife as the second gift but it would indeed be a wonderful graduation gift. The reason for that is one of liability; one can actually get in a lot of trouble giving a young child an easily concealable knife; especially if he tries to take it to the wrong place. Yes, I know he could try to hide most blades, firearms, etc. and bring them places but I'd go with something bigger.

Let him use your fishing and/or hunting knives instead of buying him one and teach him how to gut a fish which he can then cook on a fire he built. It'll be a good experience and a confidence boost if he ( with your help ) can pull it off.
