I've lived in Sedona since '97 and Flag before that. I have most of the area in 7.5' topo, have done all the campgrounds, many many trails, summited Thunder Mountain, stealth camped and eaten at most of the reasturants, hehe.

I would hike Oak Creek fishing through out the length of Oak Creek Canyon.
Take a side hike up Westfork Canyon and double back.
Follow Oak Creek down stream through Page Spings and Cornville to the confluance with the Verde River.
Follow the Verde River to the hot springs and spend a few nights there banging hippie chick and getting chlamydia.
Go back up stream to the confluance of The Verde River and West Clear Creek.
Follow West Clear Creek all the way to south of Winslow, AZ.
Hitch back to Flagstaff and follow US HWY 89 A back to your car in Oak Creek Canyon.
This keeps you on a constant water source through out what would be, at least, three weeks of hiking and wilderness overnights!
Pack for snow.

Dec/Jan AZ in the Verde Valley can be a mixed bag. Sedona will see sniw that can stick to the streets for up to all day, even two.
Cottonwood, Page Springs, Cornville McGuierville and Camp Verde are all warmer by several degrees F*.
Up on the Rim, Flagstaff, Strawberry and Clint's Well are all much colder by upwards of 10* F in the daylight and more at night.
All un all, among the best region of all AZ , IMO!

Oak Creek is stocked with farm raised Rainbow Trout, at least in the summer. There is one section that is barbless hooks, catch and release only. Fishing requires an Arizona fishing license. Out of state/non-resident licenses cost more. I believe there is also a "trout stamp" involved, if fishing trout.
The Colorado River at Lee's Ferry has world class trout fishing and I know there are guide books for that area. Have not seen guide books for Oak Creek.

I dont think there is winter trout fishig in AZ.
The places that are warn enough to fish in winter are too warm in summer for trout to live.
Anywhere near flagstaff will be too cold for fishing any week now.
