You can make those decently quick with a 2.0L swap.
All you need is the ECU and 2.0L engine from a 2004-2008 Suzuki Forenza or Reno. Bolts right in, using the Aveo wiring harness and everything. It can run off the Aveo's 1.6L ECU, but it'll run lean, hence the need for the Forenza/Reno ECU.
pic is a 2.0L swap with a turbo strapped to it using Opel parts sings it's basically an Opel engine.

I want to say first I do not know too much about cars. I tried googling for the answer for the last two days and it is giving me like 8 different possible causes of engine overheating and I honestly dont know where or how to start fixing the issue
I have a crappy 02 Civic EX I use to commute to work and it runs okay except when I hit stop-and-go traffic, where the temperature needle rises all the way to the top. Google says it might be a fan clutch issue or that the entire radiator is fucked and needs replacement

Could be your rad.
Could be a dying fan clutch.
Could be your water pump.
Could have air in your system (doubtful unless you've had to empty your system recently for any reason).
Could be your thermostat.

Check your engine coolant / anti-freeze. Could be bone fucking dry. Same shit happened to me a few days ago. Very simple fix.
Don't put just fucking water. Actually put a 50/50 mix.

It feels like at this point all the decent mass produced cars that are worth doing anything with have been found. Old Honda's, Fox-body's, Miata's, etc. have all pretty much been ruined, and finding good examples is exceedingly rare. Plus even if you find one it's tough to want to modify it with so few clean ones left.
Any idea's on what the next car to attract all the backyard tuners who want to learn to work on cars will be? Answers like BRZ's or pic related will be obvious choices but most people won't mess with them until probably...

MN12 cars.
Either had 5.0 or 4.6 V8 in Thunderbird and Cougar and the Mark VII had the DOHC Cobra mill. All are RWD with IRS, with the Lincoln getting aluminum suspension components and driveshaft.
The Thunderbird S/C getting special mention, along with the 1989 Cougar XR7 as they got a supercharged 3.8 V6 that put out torque like a diesel.
All of these are cheap, abundant, and easy to modify. And nobody wants them because notastang.

Most of the tuning you do with the Fiesta is bolt-on upgrades. Excellent car to learn on in my opinion, and you can have an end goal of near 300whp/300tq for your aftermarket turbo build and achieve it pretty easily.
The community is fairly small, but very active and growing. There's always seemingly new vendors for the Fiesta too. If you have any specific questions about the car, I'm happy to answer them.

I'd try to aim anywhere from 1500 to 2000. Don't discredit anything cheaper though. You can get great vehicles that just need a little work for cheap.
Always check the frame, transmission and gaskets though.
