I'm not a fan of his music by any means, but his ambient stuff is actually really nice. Selected Ambient Works 85-92 is a great place to start if you want a more chill Aphex Twin.

Although after that, I don't really know. I'm not a big IDM guy.

Depends on what you're into since his style varies so heavily. I'm certain there is a 'guide to aphex twin' out there.

My personal favourite is drukqs, with its drum programming and synth bananery.

I Care Because You Do and SAW I are more chilled out.

SAW II is beautiful and is best listened to without distraction.

Analord is mostly really simple analog tunes, gets better with more listens. Took me a long time to get into it, but I revisit it pretty often now.

The Tuss is a really nice side project.

i guess you could maybe argue that he helped bring drill n bass (which really just built off of jungle/dnb) into the spotlight, but that subgenre hasn't been relevant since the mid-2000s. this doesn't take away from his influence, talent, or creativity, he just didn't pioneer a whole genre.
