the best way i can explain it is that he chops up samples in a very unique way. For instance, on Spaceship, off CD, if you listen to the original sample and the way he looped it, they sound totally different. He created a new melody from the original sample, where most producers might just loop a single part over and over.
As a lyricist, kanye is funny yet can be very serious and poignant when he wants to be. He expresses his thoughts in original ways, take Blame Game as an example. During the song there's a part where there are pitched up and pitched down vocals that pan from left to right, and it sort of gives off the feeling of voices inside your head.
Kanye's originality in lyricism is also apparent in the fact that when he started out, gangsta rap was the most popular form of rap out there. 50 cent was one of his biggest competitors. Kanye didn't try to act like he was from the streets (he isn't), he just portrayed his problems (personal, financial, spiritual) in an original, clever way over incredibly well produced hip hop beats.
On every one of Kanye's albums (maybe except graduation) he made significant strides in hip hop as a whole. He essentially started the pitched up soul sample thing back in CD. He used great string orchestration (best exemplified on Gone) on LR. He basically created the Drake we know today with 808s. Yeezus brought industrial hip hop to the masses and was a minimalist masterpiece.
It just confuses me when people listen to Kanye's music and just hear generic hip hop
