Harmony in pop music has been getting simplified since new wave became the mainstream back in the late 70s/early 80s. Everything is underutilized except for the occasional suspended chord in a "jazzy" indie rock gesture.

Black Sabbath played power chords because they sound good on a distorted guitar. A lot of more complex chords just kind of sound like shit on a clipped, overdriven amp. There's still a decent amount of chromaticism in their music.

This tbqh. Pop music up til the 60s had interesting harmonic movement. Take a look at any Meme Boys song from Pet Sounds, there are wide variety of chords being played to invoke certain things. m7b5, dominant ninths, maj7ths, m9s, augmented chords were all there, even in Beatles songs.
Pop music is largely triadic now though minus rap and that's only because they sample old songs.
