I've listened to rock and metal almost exclusively pretty much my whole life. I've made numerous attempts to get into hip-hop but I found pretty much everything I've listened to to be extremely dull and un-exciting.
Could I just be listening to the genre wrong? Am I just insanely pleb? Whats going on?

Try finding different things to focus on. It's definitely going to be different. Maybe also look into how sampling works and how the music is constructed. Developing an appreciation for that may help you appreciate the music itself, because yes there is no instrumental skills involved like in the rock you've been listening to. But the creativity shines through in its other elements.

Listen to MF Doom, A Tribe Called Quest, and Nas. East Coast Hiphop tends to have the best lyricists.
Unlike other genres, I find you can't fully appreciate hip-hop until you understand the history behind it.
I'm mainly a rock and metal fan but I like Kendrick Lamar, MF Doom, Deltron 3030, Aesop Rock, The Roots and Madlib.
