It's still deliberate. There is a conscious acknowledgement of creating something, otherwise these people wouldn't be doing what they do in the first place.

You're stretching "deliberate" so far that it applies to any action taken while not completely zoned out. If you want to say that walking your dog or scratching your balls is art, that's fine with me, but it doesn't seem to be a very useful definition.

No, I'm not. These people are performing in some way - whether it be on instruments, putting pencil/painbrush to canvas or moving their body on a stage. They are fully within that process and AWARE they are involved in a creative practice; whether their actions are improvised are not is irrelevant.
To me, the product of any creative practice can be called art. I've seen people argue that machines programmed to generate an image or audio piece isn't art, but someone has made the program to do that with the intent of an outcome. That very process of deliberation defines art.
