Listen to the classics, and follow up the albums you like the most with further records in the genre and by the artist. Pic related is basically everything you "should've" heard - I still haven't though, but know when you see them that they're the basics. A rate all the music I listen to on rateyourmusic.com (RYM) that way I have a categorization system for everything I listen to. RYM has a chart feature for the highest rated records in genres, use that to find more music in your favourite genres.
