I think pop is what they sincerely wanted to do this whole time. If you listen to the progression of their albums over time the pop influences creep in slowly, it's not like they realized overnight that they could get mad stacks by writing songs for the NFL.
Also they all played in hardcore bands before FOB, so arguably they sold out right at the start by switching to pop-punk.
