Because those genres depend on more so on skill of composition, which composers tend to hone with age. Other genres depend a lot more on emotion, which tends to dry up the older and more detached you get. Classical musicians generally don't go into the field for materialistic gain. Its such a hard, competitive, and generally money-less profession in comparison to others that you need to sincerely care about the craft.

Not to mention that the discipline necessary to "master" violin or piano is going to naturally carry throughout their life. You don't go from practicing 8-10 hours a day 6-7 days a week to getting worse in life. Unless you get arthritis anyways.
