Could someone explain his appeal? I've tried to listen to him and while he does have intricate rhymes, his flow is so unorthodox and off beat, like he's barely catching the rhythm. His music is just so non-melodic and unappealing to me.

Madvillainy, Take Me To Your Leader and Viktor Vaughn are his best projects, so try those out, if you haven't. The Mouse and The Mask is good if you want some Gorillaz-esque production and more catchy sounds but it's not one of his best collabs.

I'd argue that his production is better than any other rapper's. His beats are so catchy, along with his smart lyrics. Listen to Beef Rap, pretty much every single line is a double entendre, paired with a beat that was salvaged from an X-Men cartoon.
People always wonder whether the beats or the lyrics are more important in rap, but DOOM brings both.

Unorthodox is good, especially in hip hop which is pretty unoriginal and really prone to copycats. His flow is wonky on purpose and that's part of the appeal, he's not missing the rhythm, he's just solid enough to play with it. For this reason his a cappellas are some of the widest used by lofi producers.
There's also the fact that he's the best lyricist in hip hop by miles, and up there with the best in music in general. There's literally nobody like him. He's a giant 2bh. The only hip hop man to stand up there with the greats of music in my opinion. I'm obviously not from a hip hop background but I have lots of respect for MF DOOM as an artist.

Check out Operation Doomsday if you haven't, his rapping was at it's peak on that album, his flow and rhyme schemes was so intricate... Something nobody mentions about him is that his style has a lot of similarities to ODBs. He's not quite as unhinged, but they both have that sort of off kilter element.
