Rarewood is just preference, I think it looks nice if it's not overdone. I didn't go for golden mechanics for that reason, it would look gaudy at that point IMO. But whatever, play what you like and so will I.

minihumbuckers refers to humbuckers that are the same size but have a more limited eq range than normal humbuckers. mini humbuckers sound more like a pissed off single coil than a humbucker.

this might be a horribly-often recurring topic when it comes to classical (nylon) guitars but:

Should I get a normal one and a separate mic if I want to record or get one with a pickup in it already?

My two choices for either option are:
Mic+guitar = Yamaha C40 and a Shure SM57 for a mic (both I've read are quite good)
OR
Guitar with picukup = Yamaha CGX 102. I haven't researched too much on this one yet but seems to fit the bill, albeit a bit over my budget

Can I get some advice/opinions? Personal experiences?

The advantage of the separate mic solution is that I might record other stuff with it and it might end up being cheaper but I really don't know what the difference in sound will be (pikcup vs mic)

This might sound stupid but it's much harder than it seems.
Get a clicking metronome, and try to clap along with it so that you cannot hear the metronome. If you hear the click you fell out of time. This is really hard to keep up and I'm sure if someone did this for 5 minutes a day they could have near perfect time in a couple months.

The finish will not effect the amplified tone of a hollowbody. There's a few factors that get lost if you're dealing with magnetic pickups in full hollowbodies. You definitely shouldn't skimp though. Also I though riviera was semi hollow why does epiphone make such confusing guitars.

Honestly I like the Joe Pass Emperor II more. Also, don't hollow body guitars have more feedback? Why would manufacturers intentionally make them like that and engineer solutions around them? For looks? Does it sound better?

In Southern Man, Neil does this thing where he slightly bends a note on the high E-string while fully bending a note a whole tone below it on the B-string. For example, E-string: 10; B-string: 13 at the start of the solo here - https://youtu.be/kVRxdPWV3RM?t=4m14s

I can't seem to manage this without the B-string totally drowning out the E-string, is there some technique I'm missing or does is it just require a different amp tone?

Also at 4:40 he kind of resolves the top note into the lower one as it bends down in a totally smooth way. How the hell do I do that?

Bend a bit quicker. Try not to spend time close to but not quite on the same note. Listen to the solo from where is my mind and practice with a bit of gain. The technique is the same.

I have a La Patrie with a built in pickup, and it is super convienent and also has a tuner built in. Sounds great plugged into an amp and don't have to carry around a mic and PA when you can just plug in any guitar amp.
